31 Days of Cast Iron Cooking: day 11 {Dutch Babies}

Last night we gathered at “Best Friend Bethany’s” house for a Friday night dinner. This is a bit of a “family” tradition. Both Best Friend Bethany and I examine our pantries and come up with a meal we can cooperatively put together. We eat late – like really late, put our 6 babies (our 2 and their 4) to sleep in their two bedroom home – we have this down to a science and we get to sit together the four of us sipping coffee after a delicious meal into the wee hours of the morning. Sometimes we play games, sometimes we chat. We always laugh, we often cry. We do life well – together.
Last night’s cooperative meal will be featured in a couple of separate posts. All done in… you guessed it… CAST IRON.
Best Friend Bethany and her husband cook almost solely in cast iron so we set to work. On the menu…
Dutch Babies. Or as I call them – thanks to my Mom – Baby Dutchmen.
We used a well reviewed recipe from allrecipes.com and they were delicious. (“Dutch Babies II”) 
They rose perfectly, which is often the part my Mom and I struggle with. We speculated that the cast iron gets so hot, and stays so hot, that it directly effects the success of this recipe. I hope you’ll google it and try yourself.
With just a few ingredients we were able to feed all ten of us. Seriously no budget busting here. Plus with the accompanying fancy scrambled eggs, hash browns, bacon, and even some mimosas for the grown ups it was an all-around hit!

Ingredients:
2 eggs
1/2 cup milk
1/2 cup sifted all-purpose flour
1 pinch ground nutmeg
1 pinch salt
2 Tb. butter
2 Tb. confectioners’ sugar
(We like to serve with maple syrup or confectioners’ sugar and fresh lemon)
(Tip – can be made with out the ‘rarest’ ingredient nutmeg but boy was it tasty)
These smaller cast irons are fantastic. I don’t own any this size myself but they were perfect for single serving Dutch Babies and the kids really liked them!
