Feeding My Family // It’s Worth It

This yummy yogurt was my breakfast. Plus a delicious double latte! I’m a fan. It’s got a great texture.  A friend shared it with me, and I’m working forward to trying another flavor. I’ll admit the lovely glass container makes it feel more grown up thanatyoucalyogurt. Sometimes a change of pace like that is just the inspiration we need to make a change. Like for me to eat breakfast at all.

Breakfast, lunch, and snacks were all on the go today. It’s just how we roll I guess. We had a family adventure day and visited the Salmon Days Festival. The kids loved it and our meals were part of the adventure. Bananas, pancakes and sausages in the car! I mean heck we were desperate to make a ferry boat. You do what you gotta do.

The kids were in heaven and we won’t ever forget today. It’s amazing how food is so closely tied to our memories and can make things so extra special.

Here’s to a day of breaking rules, family adventures, and our crazy full life. We left at 9 am returned close to 5 and I was so thankful I had groceries and several options left on our meal plan. I like to include a couple extra options when I shop so even at the end of the week we can pick between 1-3 dinner choices – selecting something that sounds good.

Easiest Brown Sugar and Honey Glazed Ham

Prep was easy, we did chores while it cooked, each kid had something they liked (they are getting better at trying new things,) and the grown ups loved it. We went back for seconds after the kids went to bed. This really was a quick meal to throw together and very little work for a lot of pay off. The grading of the cheese, tossing the ham glaze together, and sautéing the green beans were all very simple. Just had to give it bake time.

I hope you will try this one at home – use a veggie you and your kids like. Next time I’m going to do broccoli or cauliflower.

With the leftovers I diced half the ham to use for “ham and lentil soup” later. I am hoping to share my fave soup recipe my mom makes. I tossed the diced ham in Ziploc bags and into the freezer for when I’m ready. The other half the leftovers I’ll serve the boys for lunches.

I also threw together the four-ingredient peanut butter energy balls to try for breakfast. It was one of a few ideas I threw out there in my cry for help when it comes to breakfast.

I will let you know how it goes with the kids in the morning. Of the 2 options I gave them (new breakfast choices) it is what they picked; but I have my suspicions. I will say this though, trying and making something for my family is always worth it. Even on full days like today when it would be easier to grab something out or do yet another “no cook” meal it is always worth cooking for them. Yes it’s discouraging sometimes when not everyone likes it, when I don’t like it, or even when there isn’t enough or I make way too much. There are a million things that could go wrong, but no matter what I’m glad I put forth the energy. I find even more satisfaction when I’m wiped after dinner and I put in the extra effort to prep leftovers to use in future meals or toss something together as an option for breakfast – it leaves me feeling accomplished and like I’m taking care of my people.
