Red Cabbage and Chicken Tacos

Red Cabbage and Chicken Tacos
Cilantro-lime dressing
Ingredients
1 red cabbage, finely shredded
½ cup cilantro leaves
2 scallions, finely chopped
2 pickled jalapenos, sliced
¾ cup sour cream
2 Tb fresh lime juice
2 Tb olive oil
1 rotisserie chicken, shredded (could be made with boiled
chicken breasts)
Directions
Puree sour cream, cilantro, lime juice and olive oil in
blender or food processor until smooth.

 

Mix cabbage, jalapenos, and scallions in bowl and over with
dressing.
Let sit for 15 minutes until cabbage just begins to wilt –
to ensure maximum flavor.
Add chicken and mix together.

 

Salt and pepper to taste. Serve with flour tortillas or hard
corn shells. Loved them in lightly browned flour tortillas.
