As part of our Friday night breakfast for dinner we included some “Fancy Scrambled Eggs.” My two year old eats an egg almost every morning for breakfast and I’m hoping to get myself a small cast iron pan to cook them in.
We made these in a medium sized skillet and wanted them more filling and hearty. For the most part I will just check out my fridge and put just about anything with eggs to bulk and flavor them up.
For this “fancy” version. I just sautéed some diced mushrooms with butter and Johnny’s Seasoning Salt.
Mixed in some beaten eggs and added green onion to the mix. I could have also topped with cheese. YUM!
Just that simple and a great addition to breakfast – or in our case breakfast for dinner.
