Rapid Rolls
Ingredients:
0.25 ounces dry active yeast (would use a tad more next time)
3/4 cup warm water
1/4 cup honey
1/4 cup melted butter
1 egg
1 tsp. salt
Almost 6 cups flour
-tad bit extra melted butter to brush on top-
Gently mix yeast and warm water together and let sit for five minutes.
Mix in honey.
Then add melted butter, beaten egg and salt.
Slowly add flour about a half cup at a time until dough pulls away from the sides of the bowl.
Lay out on lightly floured surface.
Divided into 12 equal parts. Roll into balls and lay in a cast iron skillet.
Let rise, covered, for 20 minutes or until doubled in size. The longer you can let them rise the better. I would let them go a little longer next time.
Brush with melted butter and bake at 400° for 25 minutes.
When you remove them from the oven brush with more melted butter and sprinkle a pinch of salt on each roll.
