31 Days of Cast Iron Cooking: day 6 {Baking Brownies}

I was nervous about baking in my cast iron. And brave to try something for the first time with company on the way over but this Brownie recipe was a TOTAL HIT!! We served with vanilla ice cream and next time I might add strawberries.

Ingredients & Directions (with my modifications): 
3 eggs, 1 cup sugar (whisked)
4Tbsp salted butter, 1/4 cup half & half melted in cast iron skillet; then add 1 cup semi sweet chocolate chips until melted and stirring constantly, and cool for 5 minutes. 
Mix together 1 cup flour, 1/2 cup cocoa powder, and a pinch of salt. 
Add cooked melted chocolate/butter/cream mixture to whisked egg and sugar. 
Then fold in dry ingredients and once mixed pour into cast iron skillet and sprinkle a small handful of chocolate chips on the top.
Bake for 20 minutes in a 350° oven. 
And I definitely appreciated the tip to take it out on the “early side” since cast iron stays hot and continues cooking. I baked for 20 minutes and roved it. Our’s was perfect after about 10 minutes of being out of the oven. Soft on the edges and just the right amount of gooey in middle.

So tasty I didn’t get an “after picture before it was almost GONE!!
