Feeding My Family // This Week

So the last few days of October got crazy busy and I didn’t get my final posts up. Committed to completing the series I’m going to share what’s for dinner this week at my house. Then I will write a couple more posts in the series before closing it out fully. If you are just joining me you can read more about the challenge  I took on this October, 31 days of feeding my family.

You can also follow along on Instagram as I journal gratitude entries, all through the month of November, in my Bible. And it’s not too late to join in if you want to, read more here.

So here’s what’s for dinner this week…

Skillet Lasagna
I love this recipe from Pampered Chef!

Zuppa Toscana

Asian Meatloaf

I found on All Recipes here.
(Sounds crazy but is delicious!)

Pad Thai (again!)

I have been adding a little bit of fish sauce and peanut butter to the sauce too.

Shepherd’s Pie

I will share this recipe on my blog later this week, but I just use any ground meat  I have on hand, green beans and corn, homemade mashed potatoes, and I’m going to add some cauliflower this time. Plus a gravy mix!

Also going to try a new Pinterest recipe…
Slow Cooker Basil Chicken in Yellow Curry Sauce.

Slow Cooker Basil Chicken in Coconut Curry Sauce

I am always on the hunt for slow cooker and instant pot recipes so if you have any that you love send them my way!
