Lemon Blueberry Bread

I really do enjoy baking. This morning Ben took my eldest to school which left we about an hour to work on chores I’ve ignored for a few days, primarily due to the incredible sunshine we’ve been getting but also simply because I really loath dishes and laundry. I mean come on, they are never ending and except for a few small moments just after I complete the task there is always more to do. Boo! That being said I took the hour to tidy my kitchen, do the dishes, and laced in a little baking to brighten my spirits. This Lemon Blueberry Bread by Glorious Treats was just the bright recipe I needed.

Lemon Blueberry Bread

Ingredients:

  • 1 and 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/3 cup unsalted butter, melted
  • 1 cup sugar
  • 2 eggs
  • 1/2 teaspoon vanilla extract
  • 2 teaspoons fresh grated lemon zest
  • 2 Tablespoons fresh lemon juice
  • 1/2 cup milk
  • 1 cup fresh or frozen blueberries (I used fresh)
  • 1 Tablespoons all-purpose flour
Lemon glaze
  • 2 Tablespons butter, melted
  • 1/2 cup powdered sugar
  • 2 Tablespoons fresh lemon juice
  • 1/2 teaspoon vanilla extract

I love when I have all the ingredients on hand! I happened to pick up some awesome lemons and boy did this recipe really hit the spot. Especially since I took it as a treat for a sunshiny picnic with some friends. I love bringing a home-baked treat to spoil girlfriends on just a normal everyday playdate. It seems that food can make a normal, everyday occurrence seem special and memorable.

A few tips from me….
I only used 1 cup of frozen blueberries (she said when she originally made it she used more and suggested we try 1 cup, I thought this was just perfect.)
Next time I will make the  glaze a bit thicker, less milk and maybe less lemon juice and a bit more powdered sugar. Maybe even use the electric mixer to get out all the sugar lumps.
I will also make sure there are some blueberries near the top of my bread, even if I just pop a few on top right before I put it in the oven.

I’ll tell you the cake really was a hit with both the kids and the grown ups and was just the special treat I was going for. We just sliced it right up right on our picnic blanket and I had a bit leftover to share with some ladies over lunch the next day. I tend to like these light and bright cakes/breads during Springtime and Summer and then in fall I lean toward zucchini, banana, and pumpkin breads. Do you have any go-to breads (cake-like are my faves) that you bring out seasonally? I’d love to give them a try. I’ve done two lemon recipes recently. I’m thinking I’ll try orange or something really off the beaten path. The lemon bundt cake I made a couple weeks ago was a huge hit and I’ll need to make it again soon! (I mean with both a glaze and a cream cheese frosting how could it not be a hit?!)
